Green borsch is excellent for dietary nutrition, it does not burden the stomach and at the same time it perfectly saturates it.

Ingredients

Oyster mushrooms - 500 g

Potatoes - 2 pcs.

Eggs - 3 pcs.

Sorrel - 300 g

Carrots - 1 pc.

Onions - 1 pc.

Parsley - 30 g

Bay leaf - 1 pc.

Water - 1.5 l

Salt, pepper - to taste

Step by step recipe with photo

Today we cook green borscht in water. Instead of a meat ingredient, add mushrooms, use oyster mushrooms, although you can take mushrooms if you wish. Before adding to the borsch, it is better to lightly fry the mushrooms in oil in a pan, so they will fully reveal their taste. The main component of green borscht is traditionally sorrel, vegetables are used as additional products.

Place a pot of water on the stove, boil, salt, throw bay leaves, peppercorns. Peel the potatoes, cut them into cubes or strips, put them in boiling water, cook for 20-25 minutes until tender.

Remove the top layer from the onions and carrots, grate the carrots with large holes, cut the onion into squares.

Preheat a frying pan on the burner, pour in oil, then add vegetables for sautéing. Fry the mixture for 3 minutes.

Wash the oyster mushrooms well, cut into large or medium pieces.

Fry the mushrooms for 5 minutes in a separate skillet on medium heat. Season the mushrooms with a little salt.

Pre-boil the eggs until tender, cool, remove the shell. Cut the eggs into medium-sized cubes.

Wash the sorrel, chop the stems finely, the leaves - a little larger.

When the potatoes are almost ready, add mushrooms and vegetables from the pan to it, cook for 10 minutes. At the very end add eggs, sorrel and parsley, cook for no more than 5 minutes. Taste the borscht, add salt and pepper if necessary, also adjust the thickness yourself. Bring the borsch to a boil, remove from heat, let stand for 15 minutes.

After insisting, pour the green borsch with oyster mushrooms into plates.
