Light flavorful soup with sun-dried tomatoes, lentils and bulgur! Delicious balanced dish!

Red lentils - 50 g
Bulgur - 40 g
Bulgarian sweet pepper - 90 g
Potatoes - 250 g
Sun-dried tomatoes - 40 g
Water - 1 l
Dried mint - 1 tsp
Salt - 1 tsp

Soup with lentils, bulgur and sun-dried tomatoes attracts with its lightness! The dish is not at all heavy, all the products are perfectly combined with each other and the soup turns out to be quite balanced.
I never thought that sun-dried tomatoes would be so successful even in first courses. The remnants of sun-dried tomatoes, which were dried last summer, adorned this wonderful soup. We are waiting for the new season, so that again all the baking sheets and wide forms are filled with juicy slices of ground meaty tomatoes. The weight of the bell pepper is already indicated in the peeled form.
Cut the pepper into small cubes. Also rinse, peel and cut the potatoes into small slices.
Place clean lentils in a saucepan.
Cover with boiling water. Bring to a boil.
Add bulgur, potatoes, bell peppers and sun-dried tomatoes (cut large tomato slices into smaller pieces).
Bring to a boil, season with salt and simmer for 20-30 minutes over low heat. Add dried mint at the end of cooking.
The soup is ready! Serve it hot!
