Radish soup is an unusual, but very tasty, lean dish with a delicate texture.

Radish soup at first seemed like an absolutely wild idea to me. I don’t know about you, but I am used to this vegetable exclusively raw. However, I was told that this is a great option for making bitter radishes, and I decided to give it a try. I will honestly warn you, my radish was not exactly wildly bitter, it was just starting to taste bitter. But, in my opinion, the rumors do not lie: after the heat treatment, there was no bitterness at all, rather, on the contrary, the soup turned out to be slightly sweet, very delicate, the child ate with pleasure. The consistency is pleasant, similar to mashed soups.
An additional plus of radish soup is that it cleans the intestines well. Not like prunes, but clearly stimulating. True, this plus under other circumstances may turn out to be a minus, so keep in mind.
Clean and finely chop the onions. You can also set aside and chop a couple of radishes beforehand, which will then become both decoration and seasoning.
The rest of the radishes, three on a coarse grater.
In one tablespoon of oil, fry the onion until transparent or golden brown.
Add two more tablespoons of oil and lightly fry the flour with the onion.
Stir in the grated radish, add water, bring the radish soup to a boil while stirring, and cook for about 5 minutes. There is no milk, this is the natural color of the radish soup thickened with flour.
By the end of cooking the soup, finely chop the herbs.
Serve the radish soup, sprinkle with fresh herbs and slices of raw radish for spiciness (optional).
