Recipe for a refreshing summer kvass soup.
Ingredients
Beets - 1 pc.
Boiled eggs - 2 pcs.
Cucumber - 0.5 pcs.
Kvass - 2 glasses
Red onion - 20 g
Greens - 30 g
Sour cream - 1 tbsp.
Mustard - 1 tsp
Salt - 10 g
Sugar - 5 g

On a hot summer day, what could be better than a refreshing vegetable soup? We are all used to cooking okroshka on kvass in the heat. Beetroot on kvass is an excellent alternative. Beetroot can also be cooked with or without meat products. Today I offer you a second version of this light soup.
Its difference from the usual one consists in dressing, although often okroshka is seasoned in the same way: rubbing yolks with sour cream and mustard. You can do with sour cream alone.
If you are preparing beetroot for dinner for a large family, then you can fill with kvass immediately in a common saucepan. If your household does not dine at the same time, then it is better to keep the thick part, dressing and kvass separately before serving.
Take products for cooking beetroot with kvass according to the list.
Cut the boiled beets into small cubes. Peel the eggs.
Place the beets in a saucepan.
Add a fresh cucumber cut into the same small cubes there.
Chop the lettuce very finely and dice the egg whites.
Add finely chopped dill and parsley, you can also take green onions instead of red ones, or you can add both types of onions.
Add mustard to the yolks, in this case it is Dijon, put less ordinary hot mustard.
Add sour cream and rub the dressing until smooth.
Put the prepared vegetable mixture into deep bowls and cover with kvass. Adjust salt and sugar.
Add sour cream dressing and toss the beetroot.
Adjust the density of the beetroot with kvass as you wish.
You can additionally serve sour cream.
