Ingredients
For soup:
Nettle - 45 g
Water (broth) - 1300 ml
Potatoes - 2 pcs.
Carrots - 1 pc.
Onions - 1 pc.
Bay leaf - 1 pc.
Salt to taste
Black pepper - to taste
For dumplings:
Eggs - 1 pc.
Corn flour - 40-50 g
For filing:
Eggs - 3 pcs. (or to taste)
Sour cream for serving - optional

The ingredients for making soup with nettles and dumplings (as well as boiled eggs) are in front of you. Try to pick young nettles.
Finely chop the onion and three grated carrots (I had frozen grated carrots). Put onions and carrots in water or broth and put the pot on fire.
Then cut the potatoes into cubes and send them to the soup. We wait until it boils, and after boiling, cook over low heat for 10 minutes.
While the vegetables are boiling, let's do the nettles. We put on gloves (so as not to burn our delicate hands), rinse the nettle well under running water. We boil a small amount of water and fill the washed nettle with this boiling water. Now the nettle does not burn and you can chop it with a knife even without gloves.
Add the chopped nettle to the soup and cook for another 5 minutes.
Let's start making dumplings. Drive 1 egg into a bowl. Salt, pepper and beat with a fork. The rest of the eggs (3 pcs.) We need to hard-boil. We'll need them to serve the soup.
Pour in corn flour and stir well so that there are no lumps. Do not make the dough too thick, otherwise the dumplings will be very dense and hard.
We form small balls of dough with our hands and put them in the soup. And we continue to cook for another 10 minutes.
Then add bay leaves, salt and pepper to taste. And cook the soup for another 5-10 minutes.
Nettle and dumpling soup is ready! Pour the soup into bowls, add chopped boiled eggs (adjust the number of eggs as desired) and add sour cream to taste (you can do without it).
