Fans of mushroom soups and pearl barley will love this dish, which is simple to prepare and in composition. In addition, dried mushroom soup with barley is suitable for lean and vegetarian menus.

There are variants of such a soup with the addition of some spices, but more often I only want a soup with a mushroom aroma. Usually, for frying or simmering vegetables that go to soup as a dressing, I use vegetable oil to a minimum, but for mushroom soups, vegetable oil is not superfluous!

Prepare foods for dried mushroom soup with barley. The amount of barley recommended for one serving of soup is one tablespoon of dry cereal, but I added more, I wanted to get a very thick soup.

Both mushrooms and pearl barley need to be soaked for about one hour.

Do not forget to sort the pearl barley before soaking and rinse thoroughly.

After an hour, the cereal will swell a little, this will facilitate and speed up its preparation.

Soaked mushrooms, if coarsely sliced, cut into smaller pieces or the desired size.
