Kulesh is a dish that is most often characterized as thick soup or chowder with millet, which has spread to Russian and Belarusian cuisine from Zaporozhye. Kulesh is prepared with bacon, cracklings, mushrooms, in meat or vegetable broth with the addition of vegetables. As I wrote above, today we will cook a lean kulesh - with vegetables and dried porcini mushrooms.
To prepare lean millet kulesh, prepare the foods according to the list.
Soak the mushrooms in hot water for 10-15 minutes.
Cut the onion into pieces, grate the carrots. Fry vegetables lightly in vegetable oil.
Boil about 2 liters of water, add salt, add bay leaves and bring to a boil. Then add the washed millet, add the mushrooms cut into pieces and cook for 15 minutes.
Then add grilled vegetables and potato cubes to the soup. Cook for another 10-15 minutes until cooked through.
Millet kulesh is ready! Serve hot. Separately, you can serve greens and sour cream.
