Simple mushroom soup made from dried white mushrooms with homemade noodles.
Ingredients
Dried porcini mushrooms - 50 g
Potatoes - 200 g
Onions - 150 g
Refined oil - 20 g
Homemade noodles - 50 g
Water - 1200 ml
Salt to taste
Bay leaf - 2 pcs.
Dry thyme (thyme) - 1 tsp
Dry dill - 2 tsp

Porcini mushrooms have an exceptionally delicious taste and aroma that cannot be compared with anything. Moreover, in dried form, these qualities are manifested even more strongly, giving the dishes a special sophistication.
White mushroom is especially popular in Italy, France and, of course, in Russia. And we will prepare a simple and delicious soup from dried porcini mushrooms in the best traditions of our national cuisine. Everything ingenious is simple … and delicious!
To prepare mushroom soup from dried porcini mushrooms, prepare the foods according to the list.
Soak the mushrooms in a glass of warm water for 15 minutes.
Chop the onion into chunks and sauté in vegetable oil, thyme and black pepper.
Bring 1.5 liters of water to a boil, add the swollen mushrooms (if the pieces are large, cut them into smaller pieces) along with the mushroom water. Add onion, bay leaf, dill, salt to taste and cook for 10 minutes. Then add the potato cubes and noodles.
Cook until fully cooked for about 10 minutes more. Dried porcini mushroom soup is ready!
Before serving, let the soup steep in a saucepan, covered for about 30 minutes. If you wish, you can fill the soup with sour cream or heavy cream!
