Solyanka belong to Russian pickled soups. They contain a brine made from acidic products. In Russia, during the post they cooked mushroom hodgepodge. The soup is incredibly tasty, with a rich mushroom aroma. It is satisfying, and at the same time you will not get better from it.
The hodgepodge consists of three or four types of mushrooms, which can be fresh, salted, or frozen. In addition, we add olives and capers, which will give the soup a special unique taste. The acidity in the soup is from the presence of pickles and pickles.
To prepare mushroom hodgepodge with cucumbers, we prepare the necessary set of products.
Soak dried mushrooms for 2-3 hours and boil. Cool and chop the boiled mushrooms. We do not pour out the mushroom broth, but leave it.
We have frozen mushrooms, we defrost them.
The third will be fresh champignons. We clean them and cut them.
Grate pickles on a grater with large holes or cut into cubes, as you like.
Cut the onion into small cubes, grate the carrots on a grater with large holes.
We send the onions to be sautéed in vegetable oil until transparent. Add carrots to the onion and sauté together for 2-3 minutes. Then add flour, mix and saute for 1-2 minutes.
Add tomato paste.
Add grated cucumbers and 150 milliliters of cucumber pickle.
It remains to add the mushroom broth. We simmer everything together for 10 minutes.
Meanwhile, pour 1.5 liters of water into a saucepan and send mushrooms, boiled dry mushrooms and thawed mushrooms into it. Cook everything together for 30 minutes on very low heat. And then add the browned vegetables. Salt, pepper, add capers, olives. After 5 minutes, the mushroom hodgepodge with cucumbers is ready. We insist for 10 minutes.
When serving, add lemon to the soup, if desired, add sour cream and herbs.
Pour into plates. Enjoy your meal!
