I would like to bring to your attention a gorgeous hearty rich potato soup with bacon and dried mushrooms. Such a soup will immediately satisfy the feeling of hunger, give you a charge of vivacity and strength. More than one ingredient is taken as a basis here: potatoes, bacon, and mushrooms all play an important role. The aroma of the ready-made soup is incredible, you don't have to talk about the taste, you just have to try it once. This soup can be served with sour cream, adding rye bread and a little greens to the table.
Prepare food.
Use the mushrooms that you have in the bins (I still have stocks of porcini and boletus mushrooms). Pour dry mushrooms with clean water, leave alone for a couple of hours.
Peel and wash potato tubers, dry. Cut the potatoes into medium sticks and transfer to a saucepan.
Then add the soaked mushrooms to the pan. The water in which the mushrooms were infused must be filtered and poured into a saucepan, add pure water so that we end up with 1-1.2 liters of liquid.
Heat the vegetable oil in a separate skillet. Peel the onion, cut into cubes and transfer to the pan. Then put the chopped bacon into the pan.
Fry the onion and bacon for 3-4 minutes.
After 20 minutes of boiling the potatoes and mushrooms, transfer the bacon and onions from the pan to the pan. Boil the soup for another 15 minutes.
At the end of cooking, add salt, pepper, chopped dill to the soup, be sure to take a sample. Potato soup with bacon and dried mushrooms is ready, can be served.
