As a child, I often had to eat mushroom soups. We often went to the forest and even very close, at the edge of the forest we had the opportunity to pick up some mushrooms for soup. This is how they cooked fresh soup immediately after picking: while the main mushrooms were being sorted out, the first dish of fresh boletus was already being prepared.
Earlier I already had to acquaint the reader with mushroom dishes. In this recipe - potatoes with mushrooms, here - canned mushrooms, and here - porcini mushroom cream soup. Well, in this recipe I will tell you how to cook mushroom soup from fresh boletus boletus.
Boletus mushrooms are less strong mushrooms than, for example, boletus or boletus. Among them, there are even those that "crawl", creep apart. I remember that my uncle loved fried potatoes with just such "smeared" boletus mushrooms. Well, for the soup it is still better to select young and strong mushrooms. And there, how it goes.
You can cook mushroom soup from fresh birch bark without meat, but I will cook my dish with chicken wings. This will make the flavor richer and the soup more nutritious.
To begin with, we will work out the mushrooms: remove a thin layer of skin from the legs, and remove forest debris from the caps.
Cut the legs into rings, cut the mushroom caps into several parts, depending on the size. Rinse the boletus, remove the parts affected by worms.
Fill the chicken wings or other parts of the chicken with water, put on the fire to cook.
Cut the carrots and parsley root into thin slices. We'll also need parsley, we'll add it at the end.
Add the chopped roots together with the finely chopped onion to the saucepan immediately. Let's salt. After the water boils, foam begins to form, remove it.
Peel the potatoes, cut them into small pieces.
Add potatoes and previously prepared mushrooms to the soup. Cook for 35 minutes. At the end add finely chopped parsley and dill, bay leaf.
Mushroom soup from fresh boletus boletus is ready. I deliberately didn’t make sautéing from onions and carrots, so as not to drown out the taste of mushrooms. The soup turns out to be delicious and rich, well, and the mushrooms give it a wonderful aroma.
