Water (or broth) - 300 ml
Onions - 50 g
Vegetable oil - 1-2 tablespoons
Butter - 15 g
Garlic - 1 medium clove

From early summer to mid-autumn, it is the chanterelle harvesting season. Don't miss out on the opportunity to pick these wonderful mushrooms and make an autumn cream soup with them. Chanterelle cream soup with cream turns out thick, nourishing, with a delicate creamy consistency and a wonderful mushroom aroma. A plate of this soup can easily replace a full meal. Pour vegetable oil into a deep frying pan and add butter, melt. Add thin slices of potatoes. Fry for 2 minutes over medium heat, stirring occasionally.
Add the onion, cut into half rings, and fry for 3 minutes, stirring occasionally.
Add chopped garlic and chanterelles, cut into medium pieces (leave the small ones whole). Fry for 5 minutes, stirring occasionally.
Pour in water or broth, bring to a boil, salt. Cook over low heat for about 8-10 minutes, until the potatoes are ready.
