Pumpkin soup is best cooked in the fall, but it's important to choose the right pumpkin for the soup. Try not to use butternut squash because it has a very sweet flesh and is best for sweet cereals or baked with fruit. Other varieties of pumpkin are suitable for unsweetened soup, usually large or round.
In addition to pumpkin, add carrots and potatoes to the soup, they will make the soup rich, and for tenderness and creamy taste, we use cream. Of course, we will also need spices, and the final flavoring accent will be fried champignons, which will make the soup not only hearty, but also very tasty. We take everything we need and start preparing pumpkin soup with mushrooms.
Prepare all the vegetables for the soup. First, peel all the vegetables, then cut the potatoes, carrots and pumpkin into the same cubes, cut the mushrooms into slices, chop the onion and chop the garlic.
Heat vegetable oil in a frying pan and fry the onion in it. At the end of frying, add chopped garlic, after 20 seconds add paprika and grated nutmeg, immediately remove from heat.
Put the diced potatoes, carrots and pumpkin in a saucepan, fill with water so that the water barely covers the vegetables. Put the pan on the stove and bring it to a boil, immediately add the fried onion with garlic and spices. We will cook until the vegetables are softened.
In the meantime, the soup is cooking, fry the chopped mushrooms, season with salt and pepper.
When the vegetables are completely soft, remove the pan from the stove and purée with a hand blender. Add salt and ground pepper to taste.
Pour cream into the soup, stir and put on the stove again, bring to a boil and turn off after a minute. The soup is ready.
Pour hot soup into bowls and add fried mushrooms to each bowl. Serve immediately - pumpkin soup with mushrooms is ready for tasting.
