Puree soups are very popular, especially in families with small children. The cream soup has a very delicate structure, it is moderately thick, but does not look like porridge or mashed potatoes. Favorite serving option - along with fresh herbs and crackers. Chicken puree soup is a great option for a light yet hearty lunch.
To make mashed potatoes with chicken, we need chicken meat, vegetables (potatoes, onions, carrots), white crouton bread, salt, pepper.
Peel and chop the potatoes arbitrarily, because then we will still turn them into mashed potatoes.
We wash the chicken meat thoroughly and cut it into small pieces - this way it will cook faster. We put potatoes and meat in a saucepan, pour 1.5 liters of filtered water. Sprinkle salt and pepper, cook over low heat after boiling.
While the potatoes and chicken are boiling, we will prepare the frying. Of course, you can put vegetables in the soup raw and cook them without frying them first. But fried onions will give a more pronounced flavor to the creamy soup, and the carrots - more brightness. Therefore, we clean the onion and chop it finely.
We clean the fresh carrots, wash and rub on a coarse or fine grater.
We fry vegetables in a preheated pan for literally 2-3 minutes, you can put a piece of butter in the frying, or if the pan is with a non-stick coating, you can do without oil at all. Then we shift the fragrant frying into a saucepan with potatoes and chicken. Cook for another 10 minutes.
Cut a slice or two of white bread into cubes or strips. Fry in a dry frying pan until golden brown.
You can take out a few pieces of boiled chicken from the prepared soup and leave them whole, the rest with a blender, bring to a puree state. Then put pieces of meat and crackers into the finished cream soup before serving - this is one of the serving options. Alternatively, you can puree the whole soup and garnish with fresh herbs and croutons before serving.
