Salt, black pepper - to taste

Delicate, creamy soup made from zucchini and potatoes is perfect for both diet food and for children. The soup is so tender that it looks more like a creamy dessert rather than a first course. Creamy squash soup can be supplemented with croutons, or, conversely, with fresh bread, I like it even better. Not soup, but real delight.

We will prepare the necessary products.

Heat 1 tablespoon in a saucepan. vegetable oil, add finely chopped onion and garlic. Fry, stirring occasionally, for about 3 minutes, until soft.

Dice the potatoes and add to the saucepan. Fry for 5-7 minutes.

Peel the zucchini (if the zucchini is young, you can miss this moment), cut into cubes, add to the pan to the vegetables. Fry for another 5 minutes.

Add 1 liter of broth to a saucepan, bring to a boil, cook the soup for 20 minutes.

Remove the pan from heat and leave for 5 minutes. Then grind the vegetables with a hand blender into a smooth, homogeneous mass.
