Puree soups are a great thing! Both tasty and healthy. Especially for those who have problems with the gastrointestinal tract. Mashed potato soup is a simple and tasty soup, quick to prepare and not expensive at all. If you do not add cream to it and do not use butter, you can cook in fasting.
Serve with croutons.
To make mashed potato soup, prepare the ingredients according to the list.
Chop the onion and fry in sunflower oil.
Peel the potatoes, chop them (you don't need to grind them: we will purée anyway) and add them to the pan with fried onions. Fill with water, salt and cook. Cook the potatoes until soft.
While the potatoes are boiling, peel the garlic and fry in butter.
The potatoes are ready. We shift it with a slotted spoon to another pan. Do not pour the broth in which the potatoes were cooked !!! Puree the potatoes with an immersion blender, adding the potato broth to the thickness you need.
Add the fried garlic along with the oil. Purée again. Add salt if necessary.
The mashed potato soup turns out to be very delicate, silky! Season with black pepper, add cream.
The mashed potato soup is ready. Serve warm.
