I want to share a vegetarian recipe for a delicious mashed pea soup. The soup is not only tasty and nutritious due to the protein, but also a beautiful sunny beige color. If you have never eaten puree soup, then I highly recommend starting with pea.

Why is the recipe vegetarian? Peas, like all legumes, do not require the addition of meat or broth. And the soup turns out as if with meat. The soup is easy to prepare and you will see it now.

Rinse the peas first. Some housewives recommend soaking the peas for one hour in water to make them cook faster. I do not soak, but immediately cook. Place the pot on the fire and simmer for about an hour over low heat. When the water boils, be sure to remove the foam.

As the peas are cooking, the water will boil, add cold water. It is believed that the temperature difference contributes to the rapid preparation of peas.

When the peas are cooked, add the chopped potatoes to them.

Be sure to add onions. It will add flavor. Onions and carrots must be peeled and chopped to any convenient size, because the soup will still need to be mashed.

When you see that all the vegetables are cooked, beat the soup with a blender in mashed potatoes. Adjust the amount of liquid yourself to your liking. Perhaps you will like a thicker soup, or, conversely, it will seem to you that a thinner one tastes better.

The salt is added last. The good news is that this way, the soup will require less salt than if you added it initially.

Garnish the soup with vegetarian mayonnaise. Since initially there was no fat in the soup, a mayonnaise decoration will come in handy. Make two circles, one large and one small.

And swipe your wand, touching both circles, drawing the spelling of the continuous "eeeee".

I highly recommend serving mashed pea soup with homemade adjika.
