Zucchini cream soup is one of the best slimming dishes! It tastes great and helps you stay on your diet.
Ingredients
Zucchini - 700 g
Rice - 100 g
Bulb onions - 1 pc.
Lemon - quarter
Turmeric - 1 tsp
Dill greens - 20 g
Rusks
Salt - 1 tsp

Creamy squash soup is very healthy and tasty. This dish is versatile and suitable for feeding the little ones, as well as for those who are on a diet or fasting. You can cook it in water, as I did, or in vegetable broth. You can add cream to it - it will be even tastier.
Wash 1 large or 2 small courgettes.
Peel the zucchini, divide lengthwise and then cut into medium cubes.
Put the zucchini in a deep dish, sprinkle with turmeric and sprinkle with lemon quarter juice. Mix.
Chop the onions finely.
Heat vegetable oil in a frying pan and fry finely chopped onions, 3-5 minutes.
Add zucchini to the onion, fry, stirring occasionally for 5-7 minutes.
Pour 1 liter of water into a saucepan and put on fire. As soon as the water boils, add 100 grams of washed rice, cook for about 10 minutes.
Add the fried zucchini to the semi-cooked rice in the broth. Season with salt and stir. Cook over low heat, 10 minutes.
Grind the contents of the pot with the immersion attachment of a blender. Cook, stirring occasionally, over low heat for another 10 minutes. If the squash soup seems too thick to you, just add a little more water or vegetable stock at this stage.
Pour the prepared zucchini puree soup into bowls, put the crackers and add finely chopped herbs.
The squash soup is ready.
