We know that lentils are a very healthy plant that does not contain fat and are especially rich in protein and folic acid. Lentils are important for our body, as they increase immunity and normalize the functioning of the gastrointestinal tract. I offer you a very tasty red lentil soup with carrots and pumpkin. The soup turns out to be very sunny and pleasant to the taste and will delight your household with satiety and healthiness.
To make the soup, we need the following foods: red lentils, carrots, pumpkin, onions, olive oil, thyme, a mixture of peppers and salt.
Cut the pumpkin and carrots into cubes. The pumpkin is large and the carrot is medium.
Pour olive oil into a saucepan, heat and add diced onion, sauté. Then add carrots and pumpkin. Add dry thyme to vegetables and fry, stirring occasionally for 15 minutes.
Rinse lentils and add to vegetables. Pour hot water into a saucepan and cook for 20-25 minutes over low heat. Salt the soup 5-10 minutes before the end of cooking.
Pour the contents of the pot into a blender.
Puree the soup until smooth.
When serving, sprinkle with pepper from the mill.
