Chicken and mushrooms are a classic combination in soups. I am sure that every housewife has a favorite recipe for such a soup.
I bring to your attention one of these soups - a thick and hearty soup made from chicken and mushrooms. In addition to the fact that this puree soup has many taste advantages, it is also good for its ease of preparation.
Let's prepare products for the chicken mushroom soup.
We wash the chicken well, cut it, fill it with cold water, put it on the stove. Bring to a boil, remove the foam that appears. Add salt and cook chicken meat for 40-50 minutes over low heat.
While the chicken is boiling, finely chop the onion, grate the carrots. Put the vegetables in a pan with heated oil and fry them for 2-3 minutes.
Add mushrooms, cut into slices, and continue to fry for another 5-7 minutes.
We take the finished meat out of the broth and cool. Strain the broth.
Pour part of the strained broth into the pan, put the finely chopped potatoes and the contents of the pan. Bring to a boil, reduce heat and cook until potatoes are tender.
Remove the skin from the cooled meat, remove the bones. Divide the meat into fibers or cut into small pieces and put in a saucepan. Add the amount of meat to the pan as desired.
With a blender, puree the contents of the pan, gradually pouring in the remaining broth. Then we return the pan to the fire, bring to a boil, but do not boil. Cook for another 2-3 minutes.
Season the finished chicken and champignon soup with pepper and pour into plates.
