Step by step recipe with photo

Among the different options for making mashed cauliflower soups, I especially liked the recipe from the book by Y. Vysotskaya. I left the composition of the ingredients almost unchanged, but simplified the preparation a little.

Cauliflower can be used fresh or frozen. In our area, frozen is more available, so the soup will be an example of it. Instead of garlic for this soup, you can take asafoetida. It is advisable to take hard cheese, but almost any that you like will do. For serving, prepare croutons from any bread.

Sometimes instead of potatoes, I add beans to cabbage soups, like in the broccoli soup recipe. Take this option as well.

For cauliflower soup, prepare the ingredients as listed.

Peel the potatoes for the soup and chop into large pieces. Then put it in boiling slightly salted water and cook over medium heat for ten minutes.

While the potatoes are cooking, simmer the onion and garlic in vegetable oil.

The onion should not be chopped finely, but the cloves of garlic should be cut in half or crushed whole with a knife.

Simmer the onion and garlic over low heat with the bay leaf. The onion should not be fried, but rather transparent.

Toss the cabbage inflorescences to the half-finished potatoes.

Then add the onion and garlic.

Cook until the potatoes and cabbage are fully cooked, that is, until they are soft.

Then pour about half of the broth into a separate container to make it easier to puree.

Purée vegetables with a pusher, dip blender attachment, or place vegetables in a blender bowl.

Return the vegetable broth to the resulting puree, add sour cream, granular mustard and mix.

Add salt to the soup if necessary.

Serve the cauliflower soup with grated cheese and / or croutons.
