I have been preparing pumpkin puree soup for many years, but only in a different recipe, recently at a visit I was lucky enough to try this wonderful soup, I liked it so much that I decided to immediately repeat it at home.

I took these products.
Peel and cut the pumpkin into pieces. I have a Hokkaidokürbis variety, so I didn't peel it off, only the seeds and pulp. Casserole 3 liter.
Peel the carrots and cut into slices.
Cut the onion into several pieces.
Finely chop the ginger.
Add 250 ml. (or more or less) water, seasoning for soup and simmer until vegetables are done, it took me 40 minutes.
Saute everything with a blender.
Add coconut milk.
Stir well, even with a spoon, or with a blender. Boil, taste, if necessary, add more salt, pepper or water.
The puree soup is ready. You can sprinkle with chili peppers. Very tasty!
