After watching another series of culinary miracles from Jamie Oliver, I also decided to make such a fragrant pea puree soup with cream and mint. Of course, thanks to my daughter, the first dish has slightly changed, and "got rid" of onions, thyme and other components, but the soup created according to this recipe is always in great demand - they eat everything and ask for more!

The taste of the soup turns out to be juicy-creamy-sweet, you want to try it again and again until you see the bottom of the plate, so if you have a large family, then cook this first dish in large quantities!

I recommend using fresh green peas or frozen ones. Dry peas are not suitable for making a soup - they need to be boiled for a long time. Buy only liquid store-bought cream - homemade dairy product will turn into fat when it comes into contact with hot puree soup. Well, do not forget the crackers, how can you go without them!

Rinse green peas in water a couple of times and pour into a saucepan. If you have citric acid available, add 1 pinch along with salt and granulated sugar. It can be replaced with lemon juice - acid is needed in the soup so that the peas do not lose their color. Pour warm water into a container and place it on the stove, bring to a boil.

Add a couple of washed mint stalks. If you like a bright mint taste, then add it not during cooking, but in the already served dish, after chopping and rubbing in a mortar or blender.

Boil the contents of the saucepan for 15 minutes, then remove the mint stalks.

Pour everything into a deep container and blend with a submersible blender for 2-3 minutes.

Pour the puree soup into deep bowls, pour cream over it and garnish with fresh mint leaves.

Serve warm pea soup with cream and mint, along with croutons. Garlic croutons will be especially harmonious in taste with the first course.
