Cooking a hearty, light, and delicious lean, veggie vegetable puree soup made from frozen green peas with potatoes and mint.
Ingredients
Green peas (frozen) - 500 g
Potatoes - 500-700 g
Onions - 1 pc.
Garlic - 3 cloves
Vegetable oil - 1-2 tablespoons
Water / vegetable broth - 1 l
Salt to taste
Ground black pepper - to taste
Lemon / lime juice - to taste
Olive oil - for serving (optional)
Mint (leaves) - 0.5-1 bunch (to taste)

This colorful, warming lean green pea puree soup is a tasty, easy-to-prepare first course option that the whole family will enjoy. Cooked with the addition of potatoes, garlic and fresh mint, in water or vegetable broth, the puree soup is light and nutritious, has an appetizing aroma, creamy texture and delicate flavor of green peas and spices. Try it!
You will need these ingredients to make Lean Pea Puree Soup.
Chop mint leaves, onions and garlic finely.
Peel and dice the potato tubers.
Fry the onions in hot vegetable oil until soft and golden brown (about 6-8 minutes).
Add the chopped garlic and sauté the mixture for another 1-2 minutes, until the aroma appears.
Add potatoes.
Pour in 1 liter of water or vegetable broth.
Bring the mixture to a boil, add 1-2 pinches of salt and cook for 15-20 minutes over medium heat, until the potatoes are tender.
Add frozen green peas. Bring the soup to a boil again and cook for another 2 minutes.
After turning off the heat, add chopped mint to the pan to the vegetables.
Grind the ingredients with an immersion blender until puree. If you prefer the soup to retain its texture, separate about 1/3 of the vegetables first, chop the rest, and then add the whole vegetables back to the pot.
Try the soup and add salt, ground black pepper and a little lemon or lime juice to taste. Mix everything well.
Lean green pea puree soup is ready. If desired, garnish each serving of the soup with a pinch of mint leaves and drizzle with a drop of olive oil.
Important additions to the recipe
If desired, fresh mint in the recipe can be replaced with dried one, or you can make soup without adding mint, adding spices and herbs to your liking.
