Chicken Mushroom Puree Soup is an easy soup to make, but quite hearty and flavorful. It is quite worthy to be a frequent guest on the table, especially in winter, when you especially want rich soups.
You can take any mushrooms, I often cook such a soup with oyster mushrooms, they are one of the most affordable both in terms of availability in stores and for price.
Let's prepare all the products and prepare the chicken soup with mushrooms for dinner.
Put chicken meat in a saucepan, you can take any parts and put one thigh in order to remove meat from it for serving soup. Peel and dice the potatoes. Add potatoes to chicken meat, lay out bay leaves, pour in 1.5 liters of boiling water. Cook the contents of the saucepan over medium heat for 15 minutes. In the cooking process, remove the foam that forms.
Then add the oyster mushrooms, cut into small cubes, to the pan. Salt the broth to taste. Cook the soup for another 20 minutes, until the potatoes and chicken are fully cooked.
Cut the onion into small cubes.
Heat olive oil and butter in a frying pan and fry the onion until soft for 5-8 minutes.
Drain the broth from the finished soup, take out all the chicken meat, bay leaf and remove the pulp from the bones. We don't need bones, but we need chicken fillet for serving.
Put half of the meat we removed from the bones in a saucepan.
We also add the fried onions.
We punch the contents of the pan with a blender and adjust the thickness of the soup as desired, adding the broth that we drained out beforehand.
Now add the cream and put the pan on the fire again. We heat the soup for another 5-7 minutes and remove the pan from heat.
Serve the ready-made mushroom puree soup with chicken in portions, garnished with chicken pieces and parsley.
