Ingredients
For a 2 liter pot:
Champignons - 400 g
Bulb onions - 1 pc.
Potatoes - 1-2 pcs.
Celery - 1 petiole
Greens - a few twigs
Vegetable oil - 2 tbsp.
Salt to taste

The simplest mushroom soup may be the tastiest. This recipe for making a lean mushroom puree soup has long sunk into my soul, and, to be honest, I've been making it for a long time too. This is one of my favorite puree soups, not only during fasting days, but also on days when you want to diet before the beach season))).
For lean mushroom soup, use the ingredients you need. Vegetables need to be peeled, washed, mushrooms must be cleaned with a stiff kitchen brush.
Cut the potatoes, add water, boil.
Cut the onion into small cubes, fry in a minimum amount of vegetable oil.
Add chopped champignons, mix, fry for 5-7 minutes.
Add sliced celery for flavor and aroma, fry all together for 3-4 minutes.
Transfer the vegetables to a saucepan or stewpan with potatoes, stir, salt and pepper.
Add the chopped parsley, stir, turn off the stove and cool the soup slightly.
Drain the broth into a glass. Pour the rest of the soup into a blender. Punch the soup until smooth, adding a little broth.
Serve the ready-made lean mushroom soup immediately. A very healthy and delicious lean soup is ready. Enjoy!
