Sweet pepper (green) - 2 pcs.
Cucumber - 3 pcs.

Gazpacho is a cold soup most often served during the hot season. It usually does not contain animal products, therefore it is suitable for vegetarians and vegans, and the absence of heat treatment makes it possible to include it in the diet of those who follow a raw food system.
For many of us, red gazpacho, which is made from ripe tomatoes, is familiar, but there is also a green and even white version of the soup.
I suggest making a green gazpacho. Let's prepare the ingredients for it.
Peel the avocado by peeling and pitting. Remove the seed capsule from the peppers. Cut the pepper, avocado, celery and cucumbers into random pieces.
Soak the bread crumb in a little water for a few minutes. You may need a little more than 50 ml of water.
Load chopped vegetables, greens (with stalks), crumb of bread (squeezing water a little), olive oil into the blender bowl. Grind everything at high speed until smooth.
Then season to taste with salt and pepper, add lemon juice and beat again. The green gazpacho is ready. It is advisable to chill it before serving, or you can serve it immediately by adding crushed ice.
You can decorate gazpacho with cucumber and celery sticks, herbs and a drop of olive oil.
