Until recently, I did not manage to taste fennel in any way, although I often met interesting recipes with it. It's time to get to know him. And, I'll tell you, I really liked this fragrant vegetable both in the salad and in the soup. It is the very healthy, dietary soup recipe that I want to share with you.
We will prepare the necessary products.
Cut onions and fennel into small pieces.
Heat olive oil in a frying pan, add mustard seeds, fry over low heat until the mustard seeds crackle.
Add chopped onions and fennel to the pan. Fry for 3-4 minutes.
Cut carrots into rings, add to the pan with vegetables. Fry for 5 minutes.
Transfer the vegetables to a saucepan, pour over the broth, add salt and black pepper to taste, cook the soup until the carrots are ready for about 20-25 minutes.
When the vegetables are tender, grind them with a blender and puree.
