Pumpkin (pulp) - 300 g

Pumpkin can be used to prepare not only salads, cereals, side dishes and desserts, but also a variety of soups. In the fall and winter, I often cook various pumpkin soups. This time I decided to cook a variant that is not quite usual for me, with the addition of an apple. Creamy pumpkin soup with baked apple and cream turns out to be fragrant, very tender, with a harmonious taste.
Let's prepare products according to the list.
Cut the pumpkin pulp into slices about 2 cm thick and put on a baking sheet. Cut the apple into halves, remove the core. Place on a baking sheet, next to the pumpkin, cut up. Cover the baking sheet with foil and put it in an oven preheated to 190 degrees. Bake until soft, about 15-25 minutes. Roasting time depends on the type of pumpkin and apples.
Pour vegetable oil into a thick-bottomed pan, add butter, melt. Pour in finely chopped onion and fry over medium heat until soft, not forgetting to stir.
Pour broth into a saucepan. You can take the broth from meat or vegetables, be guided by your taste.
Add the baked apple and pumpkin and bring to a boil.
Remove the pan from heat and whisk the contents with a blender until puree. Add salt. To make the soup smoother in texture, it is advisable to rub it through a sieve.
Pour in the cream, return the pan to the fire, heat the soup without boiling, then turn off the fire.
Delicate and aromatic pumpkin cream soup with baked apple and cream is ready. We serve soup immediately, pouring it into plates. Pumpkin seeds or crackers can be added to each plate, if desired. Enjoy your meal!
