White bean puree soup for fasting and vegetarian meals.
Ingredients
White beans - 250 g
Bulb onions - 1 pc.
Carrots - 1 pc.
Water - 1500 ml
Vegetable oil - 1 tablespoon
Salt, herbs - to taste
To soak beans:

The white bean puree soup has a beautiful color, a pleasant creamy texture, but it does not contain any animal products at all and is ideal for light fasting days or for vegetarian and vegan diets. The taste is simply wonderful, thick. Moreover, beans provide us with a supply of useful vegetable protein, more preferable than animal protein.
Despite the long soaking and boiling times, making white bean puree soup is simple, no need to think “oh, how long”!
Soak the beans in cold water for 8 hours with a pinch of baking soda. We drain the water, rinse the beans well.
Boil the beans in unsalted water until soft (an hour and a half, cooking time may vary). At the beginning of cooking, the water should be about two or three centimeters above the surface of the beans. The fire after boiling is low, cook under a lid.
When the beans are ready, cut the onions and carrots.
Fry them in vegetable oil until the onion is transparent.
Add the fried vegetables to the boiled beans. Salt.
Puree the soup to a creamy consistency.
You can serve white bean puree soup with fresh herbs or croutons.
