An easy-to-make, hearty and delicious French puree soup made with potatoes, onions and cream. The recipe has been known for over 200 years!

Potage Parmentier is a soup made from potatoes and onions, known in culinary circles since the 19th century. It was especially popular in France and England. It is believed that it was invented by Antoine-Auguste Parmentier himself, who was actively promoting the cultivation of potatoes. The first version of the soup was the simplest - potatoes + onions. We will prepare a more refined version, at the beginning of the 20th century it was already found in cookbooks.
Prepare all the ingredients you need for Parmentier soup. Peel the onions and potatoes, wash under running water. Nowadays, onions are increasingly being replaced by leeks.
Cut onion and potatoes into small cubes, put in a saucepan, add butter.
Simmer over low heat for 10 minutes, until soft. Stir often.
Add water, cook covered for 7-10 minutes, until the potatoes are fully cooked. I added just enough to cover the vegetables lightly. When the vegetables are ready, pour in the cream.
Season with salt and pepper to taste, bring to a boil.
Punch with a hand blender until smooth.
Pour the prepared Parmentier puree soup into portions, garnish with fresh herbs and serve.
