Belarusian cold soup is a cold soup that is prepared and served on hot summer days. Despite the simplicity of the products and the method of preparation, the soup turns out to be very tasty, fragrant, beautiful bright color. Before serving, the soup should be chilled well and served very cold. Prepare it in advance, put it in the refrigerator and feel free to go to the beach to relax and sunbathe. And when you return from a beach holiday on a hot weekend, the perfect meal will be waiting for you.
To prepare a fridge in Belarusian, take the products from the list. Wash and dry the greens.
Peel the beets and eggs, separate the whites from the yolks, peel the cucumber with a peeler.
Chop green onions, parsley and dill, add yolks to the greens.
Salt, lightly grind the yolks with herbs.
On a coarse grater, grate the whites, cucumber and beets.
Add greens with yolks.
Add sour cream.
Season with salt, pepper, add vinegar or lemon juice, sugar and add water little by little, stirring constantly. Add water to your taste, i.e. if you like thick soup - less water, and if you like thin soup - more water.
Having achieved the desired taste and thickness of the soup, cover the bowl with the soup with cling film and refrigerate for several hours until it is completely cooled.
Cold chill is served in Belarusian style, as a rule, with herbs and boiled or baked potatoes.
