Okroshka is a traditional Russian dish. This is a nutritious, yet light and refreshing cold soup. On hot days, okroshka is an irreplaceable dish, because the soup perfectly satisfies both hunger and thirst. Okroshka on sour cream with water and mayonnaise is one of the options for preparing a classic dish. On our site there are versions of the traditional okroshka on kvass, options on kefir and whey, but in my family they recognize only one variant of okroshka - okroshka on sour cream.
Potatoes - 1 kg
Cucumbers - 0.5 kg
Radish - 0.5 kg
Eggs - 5-6 pcs.
Boiled sausage - 0.5 kg
Green onions - 1 bunch
Dill - 2 bunches
Sour cream - 450-500 g
Mayonnaise - 1 tablespoon
Salt to taste
Ground black pepper - to taste
Citric acid - to taste
Mustard - 0.5 tsp

Today I want to share with you our family recipe for this dish. Try, perhaps your family will like okroshka with sour cream ?!
Prepare the ingredients for okroshka on sour cream according to the list. Boil 2 liters of water and refrigerate while you prepare the rest of the ingredients.
Boil potatoes and eggs. I boil everything together in one saucepan, only take the eggs out of the boiling water after 12-15 minutes, and boil the potatoes for a little longer than 25-35 minutes, until tender.
Prepare the remaining okroshka ingredients. Finely chop radishes, cucumbers, sausage. Chill chicken eggs and potatoes and chop finely.
Combine and combine all ingredients in a large bowl or saucepan. From the specified amount of ingredients, an almost full 5-liter pot of okroshka is obtained.
For dressing, add sour cream and mayonnaise to chilled water. Stir well. Add salt, ground black pepper, citric acid and mustard to taste.
Chop the dill and green onions finely.
Connect all components. Add dressing and chopped herbs to vegetables. Mix everything well, add a little more seasonings and spices to taste if necessary.
Okroshka with sour cream is ready.
