ground walnuts - 1-2 tbsp. spoons
garlic - 1 clove
olive oil - 1 tbsp the spoon
dill - 1-2 branches
allspice or black pepper

Tarator is a cold Bulgarian soup, so it would be more logical to call it summer, but in my opinion, in other seasons it can be very relevant. The tarator is served both as a first course and as an addition to main meat dishes.
Prepare simple ingredients.
Peel the cucumber and grate on a coarse grater, salt to give juice.
Grind the walnuts with garlic in a blender.
Combine the cucumber and walnut-garlic mixture.
Pour in kefir (yogurt or ayran, as options)
Stir the soup. Chop the dill finely.
Before serving, sprinkle the tarator with dill and ground pepper, drip olive oil.
