Honestly, having tried the option of okroshka in chicken broth, I fell in love with it for life. How delicious it is! Do not be lazy to boil chicken broth, because in any case you will cook potatoes and eggs, and your favorite summer soup will turn out incredibly tasty.

First, we need to cook chicken broth. Clean a large chicken thigh from fat and skin, wash under running water, boil until tender for 20-25 minutes with the addition of bay leaf, peppercorns and salt. To keep the broth clean, you need to cook it over low heat, constantly collecting foam.

Wash the potatoes at the same time and boil them in their skins until tender. Boil eggs for 8 minutes, put in cold water. Cool the finished potatoes and eggs, peel.

Cut ham or doctor's sausage into small cubes.

Separate the chicken meat from the bones, also chop finely.

Wash cucumbers, dry, peel, cut into cubes.

Next, you need to cut the potatoes and eggs.

And lastly, chop the green onions and dill.

Add sour cream or mayonnaise to okroshka (it tastes better with it), fermented baked milk or kefir and cooled chicken broth. The amount of liquid ingredients should be added to the desired thickness of the soup.

Now you need to salt okroshka to taste and add wine vinegar or lemon juice. Cover with cling film and refrigerate for a couple of hours before serving.

When serving, you can add a couple of ice cubes to everyone's plate.
