It is accepted that okroshka is a purely summer soup, a cold and refreshing first course. But we love okroshka so much that we cook it all year round, no matter if it's a frosty winter or a hot summer. Especially often, okroshka appears on our table according to this recipe, where water, sour cream and lemon are used for dressing, and boiled sausage is replaced with delicious cervelat. I hope that you will like this okroshka too.
So, for cooking okroshka in water with cervelat, prepare: sausage, potatoes, eggs, cucumbers, green onions, dill, water, sour cream, salt, citric acid. Boil peeled potatoes and hard-boiled eggs in advance. Once these foods have cooled, clean them. Cut eggs and potatoes into very small cubes and transfer to a saucepan.
Peel the cucumbers, cut into small cubes. Do the same with the sausage. Transfer the cucumbers and sausage to the pot with the eggs and potatoes.
Rinse onions and dill, chop, add herbs to a saucepan with chopped food.
Add a jar of sour cream to the same saucepan, add salt and citric acid to taste.
Now fill it all with cold boiled, settled water. Stir okroshka and put in the refrigerator to infuse for at least a couple of hours.
