If you boil potatoes, beets, eggs in advance, a quick cut and half an hour of cooling will remain for making a cold soup. Sometimes okroshka with beets is poured with kefir or other unsweetened fermented milk drink, but for those wishing to exclude a noticeable aftertaste of fermentation, I recommend choosing mineral water plus a couple of tablespoons of sour cream.
To prepare okroshka with beets, take the products from the list: boiled and cooled potatoes, beets, an egg, as well as spices, fresh herbs and cucumber, dairy sausages (or boiled poultry, boiled sausage, etc.), lemon, sour cream and mineral water …
