Spicy, cold cucumber soup is a delicious, easy-to-prepare, low-calorie dish that will pleasantly diversify your daily menu.
Cucumbers - 1 kg
Mint / basil - 2-3 sprigs (optional)
Dill - 1 bunch
Green onions - 0.5-1 bunch
Garlic - 2 cloves
Salt to taste
Ground black pepper - to taste
Lemon - 0.25-0.5 pcs. (To taste)
Yogurt - 300 g
Kefir 2.5-3.2% - 200-400 ml
Vegetable oil - 2 tbsp.

Cold cucumber soup is a godsend for hot days. Prepared on the basis of yogurt and kefir, with the addition of aromatic spices and fresh herbs, the soup does not require boiling, has an appetizing spicy taste and a thick silky texture. Light, nutritious and pleasantly refreshing, cold cucumber soup is a great alternative to hot first courses that can be made in a few minutes. Try it!
Prepare ingredients according to the list.
Peel the cucumbers and remove the seeds.
Set aside 2-3 cucumbers for a while and use for serving, and cut the remaining cucumbers into small pieces.
Place the cucumber slices in a blender bowl. Add fresh herbs: 2-3 sprigs of mint or basil, dill and green onions.
Add the juice of a quarter of a lemon, chopped garlic cloves, some ground black pepper and salt.
Add yogurt and kefir. The amount of kefir can be used to adjust the thickness of the dish. I add 300 ml of thick yogurt and 400 ml of kefir - a medium-thick soup is obtained. In order to make the soup thicker, you can add less kefir or completely eliminate kefir by increasing the amount of yogurt.
Beat the ingredients for a few minutes, until smooth. Taste the mixture and add more pepper, salt, or lemon juice to taste if needed.
Place the soup in the refrigerator for 1 hour, so that it is infused and completely cooled.
For serving, add 1-2 cucumbers, cut into small pieces, to each plate. Pour in the soup, add a pinch of fresh herbs and a little vegetable oil.
Cold cucumber soup is ready. Enjoy your meal!
