Step by step recipe with photo

There are a lot of options for okroshka. Cold soup, which can saturate you in the hot season, is cooked differently in each country. Traditional vegetables are usually added: cucumber, boiled potatoes, radishes, tomatoes, a lot of greens. And okroshka is filled in different ways: some with kvass, some with whey, some with just water. Of meat ingredients, boiled meat or sausage is often used.

I suggest you prepare a Mediterranean, light enough for the stomach, variant of okroshka, in which the meat ingredient of the soup is replaced with squid, and Greek yogurt, water and lemon juice are used for dressing.

We will prepare all the products of Mediterranean okroshka.

First of all, boil potatoes and eggs, for this we boil the eggs in boiling water for 10 minutes, and boil the potatoes in their skins for about 20 minutes. We check the readiness of the potatoes by piercing the root crop with a fork or knife. While the vegetables are boiling, cut a fresh cucumber into small cubes, cut the cherry tomatoes into quarters, finely chop the dill and parsley with a knife.

Place the chopped vegetables in a bowl.

Remove the peel from the boiled and cooled potatoes and cut them into small cubes. We peel the eggs and also cut them into small cubes.

Now let's boil the squid. To do this, boil water in a saucepan and then alternately throw each carcass into boiling water, count to ten and take out the carcass. We do this with all squid carcasses. Let the squid cool and cut the squid meat into small cubes.

We send the chopped squid pieces to a bowl with the rest of the ingredients.

You can prepare the dressing separately and then pour it over the ingredients of the soup, or you can fill the soup right away. Add yogurt, salt and ground black pepper to the vegetables.

Pour in lemon juice. I use concentrated lemon juice. You should be careful with lemon juice, add it gradually so that okroshka does not turn out to be very sour.

Now we add plain mineral water without gas. Mix all the ingredients, add salt and lemon juice, if needed, to get the right flavor balance. Ready Mediterranean okroshka should be allowed to stand in the refrigerator for at least half an hour.

We serve Mediterranean okroshka with crispbread or fresh bread, pouring it in portions and decorating with squid rings.

Okroshka turns out to be very tasty, fresh and satisfying, squid does not at all affect the taste of okroshka we are used to, it only makes okroshka more dietary, since squid meat contains a lot of protein. Enjoy your meal!
