Okroshka, beetroot or cold beetroot are light, tonic and energizing soups that are indispensable for the summer diet in many Eastern European regions. The low-calorie first course is served only cold, sometimes it is additionally cooled with ice cubes thrown into a plate. Today on the agenda: invigorating vegetarian okroshka with mineral water and kefir.
Let's take the products according to the list: pre-boiled potatoes, lilac or other onions, pitted olives, juicy greens, radishes, kefir of the desired fat content, mineral water, lemon, chili, salt.
Chop the peeled onion into small cubes, cut off several rings of hot pepper (remove especially the burning seeds).
Cut the potatoes boiled in their skins.
We load the slices into a spacious bowl, add thin rings of dense, strong radish.
Throw in a lot of chopped greens (dill, parsley, onion feathers, cilantro are good).
Sprinkle with lemon juice, add whole or cut olives.
