Classic cold beetroot on kefir is a great dish on a hot day.
Ingredients
Boiled beets - 2 pcs.
Boiled potatoes - 2 pcs.
Fresh cucumber - 0.5 pcs. long
Green onions - 6 feathers
Dill - 4 branches
Boiled eggs - 2 pcs.
Kefir - 1 l
Salt to taste

Classic cold beetroot on kefir - this is okroshka familiar to everyone, only without sausage and seasoned with kefir instead of kvass. In Lithuania, such a fridge is very popular, but they do not put potatoes in it, but serve hot mashed potatoes separately, as an addition.
Meat lovers may well add the desired meat products to this lean recipe - boiled chicken, beef or any sausages. My version is light, ringing, cooling and not weighing down! All girls will be delighted with this soup on a hot day!
Prepare foods on the list. Boil potatoes, beets and eggs in advance.
Peel potatoes and beets.
Chop beets, potatoes, eggs and cucumbers into small cubes.
Add finely chopped green onions and dill.
Place the whole slices in a saucepan, mix. You can pour it with kefir, add salt to taste and let the beetroot stew on kefir in the refrigerator. Many people love this option. In this case, the beetroot acquires a bright lilac color from the beets.
