With the onset of the warm season, one immediately remembers recipes for dishes that do not require cooking, frying or stewing - primarily due to the fact that you do not want to stand at a hot stove for a long time. And besides that, dishes without heat treatment also cook much faster. As for the first courses, among them there are also dishes that do not need to be cooked in a saucepan in the usual way. Typically, some ingredients are cooked separately and then combined with other raw foods and served cold.
Among these dishes is cold beetroot. There are several options for this dish, I suggest preparing a cold beetroot with baked beets and baked potatoes, but the potatoes will not be included in the beetroot itself, but will be served separately as an addition to the dish. A very refreshing and tasty dish for warm spring and hot summer.
Let's take the products on the list.
For the beetroot, we need to bake the beets. To do this, wash the fruits well, dry them and wrap them with a piece of foil. Put them on a baking sheet.
We also wash the potatoes, if the large ones are cut in half or in quarters, sprinkle with salt, pepper, add the chopped cloves of garlic. Place the potatoes on the foil and join the edges of the foil together to form a sealed bag. Place the beets and potatoes on a baking sheet and bake in the oven at 180 degrees for about an hour. The potatoes can be removed from the oven earlier, they will be ready in 30-40 minutes.
When the vegetables are baked, remove them from the oven. The potatoes can be left in foil, and the beets can be removed to cool. In the meantime, it cools down, chop the green onions and dill for the beetroot and put them in a bowl or saucepan.
Grate cucumbers, no need to squeeze juice. Add to the chopped greens.
Pour cold kefir into a bowl with herbs and cucumbers, add ice cubes, stir. Take the amount of ice to your liking, it will not only cool the dish, but also act as an additional liquid, because while you serve the dish, it will have time to melt. Use only boiled water to make ice.
Grate the cooled beets and put them in a bowl with the rest of the ingredients.
Add salt and pepper to the beetroot to taste and serve immediately cold. We also serve baked potatoes to the table.
Pour the beetroot with baked beets into plates, you can decorate with halves of quail eggs, serve sour cream separately.
