Ingredients
Ramson - 150 g
Radish - 120 g
Fresh cucumber - 2 pcs.

Boiled sausage - 250 g
Eggs - 2-3 pcs.
Sour cream - 300 g

We continue the series of dishes with wild garlic. Today we are preparing spring okroshka with her participation. Ramsons will be added to the dish instead of green onions. Onions, in turn, do not need to be added, otherwise the okroshka will be very sharp and bitter.
The taste of okroshka with wild garlic does not differ much from the traditional version, but still there is a certain zest. As a liquid base, we take mineral water, preferably carbonated, it is the gases that make okroshka sharp.
First of all, put the potatoes to boil. The fruit is cooked in the peel until tender for about 25 minutes. After boiling, cool the tubers completely, remove the skin, cut the pulp into medium-sized cubes.
Boil the eggs in parallel in a separate saucepan. The approximate boiling time of eggs is 10 minutes from the moment of boiling. Peel chilled eggs, then cut into cubes of approximately the same size.
Wash the radishes and cucumbers thoroughly, remove the roots, cut the fruits into thin strips. If desired, vegetables can be coarsely grated or diced (optional).
Remove the dense cellophane from the sausage, then cut into cubes.
Rinse the ramsons under running water, dry them slightly on a towel, chop as finely as possible.
Put all the chopped okroshka components into one saucepan of a suitable size, pour chilled mineral water with gases. Open the water bottle just before use to keep it as carbonated as possible.
Season okroshka with sour cream. Stir until the sour cream is completely dissolved in the liquid. Bringing okroshka to taste, add salt, squeeze the juice out of the lemon.
After cooking, put okroshka in the refrigerator for several hours to cool.
Pour cold okroshka with wild garlic and radish in mineral water into plates, serve.
