Ingredients

Potatoes (boiled, unpeeled) - 730 g

Fresh cucumbers (unpeeled) - 600 g

Radish - 200 g

Fresh greens - to taste

Black salt (Indian, volcanic) - to taste

Serum - 1.5-2 l

Turmeric - 0.5 tsp

Ground black pepper - 0.5 tsp

Sour cream, vegetarian mayonnaise - optional

For the preparation of vegetarian okroshka, you will need delicious crumbly boiled potatoes, some fresh cucumbers and radishes, as well as herbs and fresh whey. Dill, parsley, or both, it does not matter, the main thing is that there is a lot of greens.

The key ingredient in my vegetarian whey okroshka is Indian black salt. It will give the dish a special flavor of boiled egg yolk, which will make the finished dish full, more intense. Turmeric will also play a special role - it will add a slight yellow tint to the finished okroshka and, of course, will fill the dish with what is necessary and healthy.

You can fill such okroshka with sour cream or vegetarian mayonnaise.

The boiled potatoes should be peeled, finely diced and placed in a large bowl.

Add clean, finely chopped greens, chopped radishes and cucumbers there. It is not necessary to cut the skin off the cucumbers, but if it is bitter or tough, it is better to remove it so as not to spoil either the taste or the consistency of okroshka.

Salt okroshka to taste, add turmeric and black pepper. Stir to make a uniform mass, and refrigerate for an hour or two.

Serve chilled, pouring cold whey (to taste) into each serving of veggie okroshka and topping with sour cream or eggless mayonnaise.
