A light summer soup that can only be prepared in spring during the season of wild garlic and radish. Cold beetroot invigorates and vitamins the body.
Beets - 1 pc.
Radish - 100 g
Ramson - 30 g
Cucumbers - 2 pcs.
Eggs - 2-3 pcs.
Sour cream - 350 g
Dill - 10 g
Water - 1.5 l
Lemon juice to taste
Salt to taste
Boiled potatoes - 2 pcs. (for filing)

Prepare the necessary foods for cold beetroot with wild garlic and radish. Wash and dry the vegetables thoroughly.
Boil the beets in the peel until tender (or buy ready-made). After cooking, cool the vegetable completely, peel, grate on a coarse grater.
Cut off the sides of the radish, then chop the radish into thin strips or grate on a coarse grater.
Cut fresh cucumbers in the same way as radishes.
Cook eggs "hard-boiled" in advance, cool, peel, cut into cubes.
Rinse ramsons and dill, dry. Cut the greens as small as possible.
Place all prepared ingredients in a saucepan of suitable size.
Add sour cream, pour in cool water. Tighten the soup with salt and lemon juice and mix thoroughly. Chill the beetroot in the refrigerator before serving.
Boil the potatoes in a peel, cool, peel, cut into large slices. Serve cold beetroot with wild garlic and radish on the table along with boiled potatoes.
