Potatoes: 4-5 pcs;

Sweet pepper (Bulgarian): 1pc;

Tomato: 1 pc;

Olive oil: 2 tablespoons;

Black peppercorns;

Salt: to taste;

Dill and cilantro.

Not every soup can boast of such lightness as cabbage soup. This wonderful first dish gained its popularity back in Ancient Russia, when it was cooked during Lent. Today, there are a huge variety of ways to prepare it and I would like to share one of my recipes for cabbage soup from fresh cabbage.

Wash the chicken, put in a saucepan with water and put on fire. When the water starts to boil, skim off the foam until the broth is clear. Next, add the peeled whole potatoes. Continue cooking the chicken and potatoes for about half an hour. While the chicken broth is being prepared, let's take care of the vegetables. Chop the onion, tomato, bell pepper, grate the carrots on a medium grater.

Put a frying pan with olive oil on the fire and fry the onion until transparent.

Add carrots to the roast and cook, stirring for another 5 minutes.

Then add bell pepper and tomato. Stir, cover and simmer over low heat for about 10 minutes.

Chop the cabbage into thin strips.

Meanwhile, the potatoes and chicken in the broth should cook. We take out the potatoes and knead them, I used a special press for this.

We also extract the chicken from the broth, peel it of bones and skin, and split it into small pieces.

Put the potatoes and chicken back into the pot with chicken stock. Pour in the cabbage, add black peppercorns and 2 teaspoons of salt. Cover with a lid and cook for about 10 minutes over medium heat.

Next, add the vegetables fried in a pan to the pan and season the soup with finely chopped herbs. Stir, cover with a lid and turn off after 5 minutes.

Fresh cabbage soup is supposed to be served with sour cream and bread.
