Traditional fresh okroshka with boiled sausage, radishes and cucumbers, seasoned with birch kvass and sour cream.
Ingredients
Kvass from birch sap - 1 l
Doctor's sausage - 100 g
Boiled potatoes - 2 pcs. (120 g)
Boiled eggs - 3 pcs.
Fresh cucumber - 120 g
Radish - 50 g
Green onions - 10 g
Dill - 10 g
Parsley - 10 g
Sour cream - 100 g

Step by step recipe with photo
Take products for okroshka on birch sap kvass with sausage.
Rinse herbs and vegetables, peel boiled eggs and potatoes.
Cut the boiled sausage and potatoes into small cubes.
Slice the cucumber and radish next.
Chop a lot of herbs and boiled eggs.
Combine the slices in a large saucepan.
Prepare kvass from birch sap - an excellent thirst-quenching drink.
Strain the kvass.
If the family is large, then okroshka is prepared immediately, pouring kvass into the slices, adding salt and sour cream to taste.
If you don't eat everything at once, okroshka is usually seasoned in portions. Put the slices into plates.

You can take any sausage to your taste, not necessarily boiled.
- Prepare kvass from birch sap in advance using sourdough or yeast. For color, add refried kvass rusks if desired. Within a day or two of fermentation, an excellent, sharp, thirst-quenching drink is obtained.
