Wonderful cabbage soup prepared by monks on the island of Valaam in pre-Petrine times, and therefore there are no potatoes in them. After all, Peter the Great brought it to Russia. But this does not in the least impair the taste of this dish. Thick, mouth-watering cabbage soup, with a rich mushroom flavor, fragrant and very tasty, is suitable for fasting, vegetarians and those who follow a diet.
To prepare such cabbage soup, we take: cabbage, mushrooms (I have champignons), onions, parsley root, sunflower oil, garlic, bay leaf, flour, salt and pepper.
My champignons, peel and cut.
Put mushrooms in a saucepan and fill with water. Cook for 10-15 minutes.
We clean, wash and cut the parsley root.
Chop the cabbage into thin strips.
Peel the onions, wash and chop.
We take the mushrooms out of the pan, put them in a pan with sunflower oil and lightly fry.
Put the cabbage in the mushroom broth.
And parsley root. Bay leaf.
Cook the cabbage soup until the cabbage, onion and parsley root are cooked for 20 minutes. Salt and pepper to taste. Fry the flour in a dry frying pan until golden brown.
Season the cabbage soup with flour.
At the end, put herbs and chopped garlic.
