Togliatti borscht - this is how the borsch recipe I met once was called. After rereading it several times, at first I could not understand: how does it differ from the usual one? It turns out the lack of potatoes! Yes Yes! And this is what gives it a lighter note and a fresh taste. But do not spare the beets - borscht should be bright burgundy saturated color.
So, take meat broth (or cook immediately with meat), beets, carrots, cabbage, onions, tomato paste, oil (or any fat), salt and herbs.
Chop the cabbage and dip in the boiling broth, simmer until the dressing is ready.
Chop the onion finely and fry until transparent.
Add chopped carrots, simmer with a couple of spoons of broth for 5 minutes.
Simmer until soft and add tomato.
Dilute with broth, simmer a little and fill the soup.
Bring the Togliatti borscht with a slow boil until tender, season with herbs, let it brew and serve with sour cream.
From the meat from the preparation of the broth, you can make a filling for small snack pies and serve with borsch. Delicious!
