Lenten borsch with mushrooms and beans is a great dish on fast days!
Ingredients
Mushrooms - 100 g
White cabbage - 80 g
Potatoes - 60 g
Beans - 50 g
Leeks - 50 g
Carrots - 30 g
Beets - 80 g
Tomato paste - 15 g
Tomato sauce - 50 g
Sunflower oil - 60 g
Salt to taste
Water - 1.5 l
Bay leaf - 1-2 pcs.

Lean borsch with mushrooms and beans is a great first course for fasting. In terms of nutritional value, such borscht is not inferior to borscht in meat broth, only animal protein is replaced by vegetable one. Such borscht and cabbage soup have always been popular in Russia during the days of fasting.
If fasting is not important, then dressing with fat sour cream will further enhance the taste and nutritional value of borscht with mushrooms and beans. You can take dry beans after soaking them overnight, or canned in their own juice or in tomato sauce.
Take the groceries on the list.
First, put the beans soaked in advance to boil.
For lean borscht, a tasty vegetable broth is important. Therefore, first boil it: put the stalks of herbs, the green part of the leek, a couple of pieces of carrots in the water. Bring to a boil and simmer for 15 minutes.
Then remove the roots-stems, put the potatoes in the broth. Cook for 10 minutes.
Add chopped cabbage to the borscht. Boil the cabbage until half cooked.
Enter the boiled beans separately into the borsch.
Prepare a dressing. Chop the thawed mushrooms (which were boiled before freezing), leeks, beets, and carrots.
First fry the mushrooms and onions in hot oil, add carrots and beets. Add a couple of spoons of broth and simmer until vegetables are tender.
Season with tomato paste and sauce.
Enter the dressing into the borscht. Bring to a boil and simmer for 15 minutes, adding bay leaves.
